Cold Yogurt Soup

Cold yogurt soup is refreshing soup which is most suitable for summer when one wants something light and nutritious. It's famous in the summertime in Albania, Bulgaria, the Republic of Macedonia and in Turkey.



Ingredients:
250n grams thick yogurt
4 thin cucumbers
5 stalks dill, very finely chopped
1 garlic clove
1 tablespoon sea salt
Black pepper
Olive oil, best quality

1. Cut the cucumbers into very thin slices and put in a colander to let the liquid drain out.
2. Chop the garlic with the salt until the mixture is well blended.
3. Mix the yogurt and garlic well.
4. Add the cucumbers to the yogurt, add the dill and mix.
5. Pour into individual bowls, add some olive oil and black pepper on top and serve.







In the other side,  it is best served chilled or even with ice.
