Stuffed Turkey

What can a Turkey Stuffing bring to you in Christmas?


For many of us it is the one we remember from the Christmas or Thanksgiving dinner tables. It's great and delicious! 














How to make it?

Ingredients 

3/4 cup butter
2 1/2 cups chopped onions
2 cups chopped celery
4 teaspoons dried sage
1 teaspoon salt
1 teaspoon dried savory
1 teaspoon pepper
1 teaspoon marjoram
1/2 teaspoon dried thyme
14 cups dried white bread, cubed


1.In a large frying pan, melt butter over a medium heat. Fry onions and celery together with the dried herbs, salt and pepper, stirring often, until vegetables are tender, about 10-15 minutes. 

2.Transfer the mixture to a very large bowl. Add the bread cubes and mix well. 

3.If you are making the stuffing ahead: Transfer the cooked
vegetable mixture to a large bowl. Let cool and refrigerate in an airtight container for 24 hours. Mix with bread cubes before stuffing the bird. 

4.Stuff the turkey at both ends with this mixture.





A day of relaxing with family, being grateful for each other and all blessings, and, of course, eating ridiculously scrumptious food.

Cold Yogurt Soup

Cold yogurt soup is refreshing soup which is most suitable for summer when one wants something light and nutritious. It's famous in the summertime in Albania, Bulgaria, the Republic of Macedonia and in Turkey.



Ingredients:
250n grams thick yogurt
4 thin cucumbers
5 stalks dill, very finely chopped
1 garlic clove
1 tablespoon sea salt
Black pepper
Olive oil, best quality

1. Cut the cucumbers into very thin slices and put in a colander to let the liquid drain out.
2. Chop the garlic with the salt until the mixture is well blended.
3. Mix the yogurt and garlic well.
4. Add the cucumbers to the yogurt, add the dill and mix.
5. Pour into individual bowls, add some olive oil and black pepper on top and serve.







In the other side,  it is best served chilled or even with ice.

Lokman

Lokma is a Turkish fried sweet dough and meaning of the word “lokma” is “bite”. Originally developed in Turkish Sultans’ kitchens, a lokma is a fried bite-sized ball that is bathed in thick syrup or honey and cinnamon. These sweet balls of dough are served on a huge tray at traditional events and holidays. 


Way to make Lokma
Ingredients:
-1 1/3 glasses flour
-4/5 glass water
-1 tablespoon margarine
-30 gr. yeast
-1/2 teaspoon salt 

-1 glass olive oil  
-Syrup

1.Put flour in a bowl, make a well in the center, put the yeast, melted margarine and salt in the well, and stir while gradually adding water, until the flour absorbs the water.

2. Mix together until it becomes dough, put near a warm place and allow resting for the dough to swell and puff up for about an hour. 
3. Heat the olive oil in a deep frying pan 
4. Take pieces the size of a nut with a spoon, and then dip in and out of cold water
5. Put these pieces into the frying pan.
6. As the balls puff up and turn into a golden color, remove from the pan and drain away the oil.
7. Repeat this until all the dough is finished and place the fried balls in syrup. 
8. And served.


What is the best accompaniment with Lokman? A cup of Coffe : )

Octopus Pasta

Fresh to heard this? 

Octopus Pasta is a classic Greek recipe and kind of common food. In Greece, they have a lot of recipe of octopus. Such like raw octopus ice cream, fry octopus with onion, raw octopus and grilled octopus.

In this Octopus Pasta, the type of pasta suitable to be use is elbow macaroni or Ditaloni. You know, it'll make the pasta serve with good outlook.



How to make Octopus Pasta:
•    Wash and clean the octopus.
•    Allow it for drying.
•    Put oil in a pan.
•    Add bay leaf, oregano, cumin seeds, parsley, chilli pepper, tomatoes and garlic.
•    Mix it well.
•    Place the octopus on top of this mixture.
•    Season it with salt and pepper.
•    Cover it properly and put over medium heat for 45 minutes.
•    Drain and place it on a plate.
•    Mix the octopus sauce into the spaghetti.
•    Serve .

In the Greek islands, almost every fish restaurant has a fabulous version of this pasta dish. All it needs is a fresh seasonal salad and some crusty country bread to complete the meal.
